2020. The year of lockdown, PE with Joe Wicks...and banana bread. People took to baking in their masses, helping to ease the boredom of long days at home. Plus, there’s nothing a slice of cake can’t help to fix, right?
We’ve started 2021 off in a similar fashion; here are our picks of our favourite spring-inspired recipes. In our experience, the little ones will love playing sous (/licking the bowl) and, with fair wind, we may be able to enjoy them with family and friends in the sunshine in the not-too-distant future.
• Hugh Fearnley-Whittingstall’s Welsh Rarebit
A nod to Alice’s Welsh heritage, this moreish cheese on toast recipe includes a slug of beer. Say no more.
• Welsh Cakes
In keeping with the Welsh theme, a buttery teatime treat; delicious served on their own or with a big dollop of strawberry jam, and always add a sprinkle of nutmeg!
• Hot Cross Pudding
If you’re wondering what to do with leftover fruit buns, why not lather them in cream and make a fancy bread and butter pudding. You’ll thank us later.
• Pea, Mint & Spring Onion Soup with Parmesan Biscuits
The soup is delicious, the parmesan biscuits are mouth-wateringly yum - and even better when dunked! Who want soggy croutons anyway?
• The Spring Buzz Cocktail
Not quite as child friendly as the others, but it’s described as “super classy, like grandmothers and British people”. Hear hear.
